Celebrity Chef Richard Ingraham Interview and Eating Well To Win Cookbook

Style + Life + Fashion had the opportunity to interview Gabrielle Union and NBA veteran Dwyane Wade’s private chef, Richard Ingraham.

He released a new cookbook titled, Eating Well to Win – which is focused on developing delicious, flavorful recipes — many of which include either a Southern, Creole, Italian or Asian flair.

What was your inspiration for creating this cookbook?

I just wanted to be able to touch others with my cooking. Being a personal chef doesn’t allow me to cook for the masses like I would be able to if I worked in a restaurant. So, writing Eat Well To Win seemed like the perfect solution.

What is your favorite recipe in the cookbook as it relates to eating healthy?

I really like the Roasted Sea Bass and Mushroom Broth with Quinoa, Sweet Potatoes and Kale. This dish starts with roasted sea bass that has up to 20 grams of protein in a 3oz serving. It’s also a great source of omega-3 fatty acids, which help reduce the risk of cardiovascular disease by lowering blood pressure and reducing levels of cholesterol. The sea bass sits atop a mixture of quinoa (great source of protein, fiber, and essential amino acids), kale (high in vitamin k, iron, and fiber) and sweet potato (great source of potassium, vitamin C, and vitamin B6).

Are there any additional tips or ideas that you would like to leave with us?

Eating healthier doesn’t mean that your food should be flavorless and lackluster. Eating Well To Win shows you that food can be exciting, flavorful, and still be good for you. Grilled Portobello with Lobster and Shrimp Salad

Ingredients for Portobello Mushroom

6 Tablespoons grape seed oil

3 Tablespoons fig balsamic vinegar

3 garlic cloves, minced

1 Tablespoon fresh thyme

6 large portobello mushrooms, stemmed, gills scraped out

Kosher Salt and fresh ground pepper

Ingredients for Lobster and Shrimp Salad

1/4 cup rice wine vinegar

3 Tablespoons whole grain mustard

1 Tablespoon honey

2 Tablespoons shallots minced

1 garlic clove, minced

1/2 cup grape seed oil

Kosher Salt and freshly ground pepper

3/4 pound cook lobster meat chopped

1/2 pound medium cooked shrimp

1 1/2 cups ripe mango chopped

1 1/4 cup fresh raw corn from about 2-3 ears

1 cup micro greens

Method for Mushrooms

  1. Heat grill to medium high heat
  2. Whisk oil, fig balsamic vinegar, garlic, and thyme in small bowl and season with salt and pepper.
  3. Arrange mushroom caps on foil lined baking sheet, gill side up.
  4. Generously spoon dressing into each mushroom (be sure to get all that good flavor all over the cap)
  5. Place mushrooms on grill, gill side down and grill until edges start to soften
  6. Turn mushrooms over and cover
  7. Cook mushrooms until they’re nice and tender
  8. Remove mushrooms from the grill and arrange on a platter
  9. Top with Lobster and Shrimp Salad.

Method for Lobster and Shrimp Salad

  1. Combine vinegar, mustard, honey, shallots, and garlic in medium bowl.
  2. Gradually whisk in oil.
  3. Season dressing with salt and pepper.
  4. In a large bowl, combine lobster, shrimp, mango, corn, and micro greens
  5. Gradually pour dressing into lobster mixture until lightly coated
  6. Add more dressing if desired.
  7. Adjust seasonings

Ingredients

½ cup Peach Nectarine Sparkling ICE
½ cup seedless raspberry preserves
2 tablespoons Dijon mustard
Fresh ground black pepper to taste

Directions

Combine Sparkling ICE and preserves in a bowl and beat with a whisk until combined.
Whisk in Dijon mustard and black pepper.

Serving Suggestion:

Pairs well with cooled roasted beets, topped with walnuts, and blue cheese.

Toss dressing with baby spinach, red onion, goat cheese, and strawberries.

Yield 2 cups

Serves 6-8 people

Ingredients

2 Bottles Sparkling Ice Cherry Limeade
1/3 Cup Soy Sauce
5 Garlic cloves, crushed
1/2 Tablespoon Fresh Ginger, minced
1 Tablespoon whole black peppercorns
1 Teaspoon red pepper flake
1 Tablespoon extra virgin olive oil
2 lbs. Pork Tenderloin
Salt and Pepper
1/2 cup Scallion, sliced thinly

Directions

To prepare the marinade, whisk together Sparkling Ice Cherry Limeade, soy sauce, garlic, ginger, whole peppercorns, red pepper flake and olive oil in a large bowl.
Place pork tenderloin in a large zip lock bag or shallow baking dish.
Pour marinade over pork, cover or seal.
Refrigerate for 6 hours.
Remove pork from marinade and pat dry. Season both sides with salt and pepper. Reserve the liquid.
Place marinade in small saucepan and bring to a boil. Turn heat to low and simmer for 15-20 minutes.
Preheat your grill (medium high heat).
Place pork on pre-heated grill and close the cover. Turn and brush the pork with the simmered marinade every 5 minutes. Cook until meat thermometer inserted into the thickest part of the pork registers 145°F, about 15-20 minutes.
Rest for 10 minutes, slice and serve with scallions and warm marinade liquid.

Cranberry-Orange Chutney

Ingredients

  • 12 oz. Cape Cod Fresh Cranberries
  • 2 Tropicana Navel Oranges
  • 2 cups Domino Pure Cane Sugar
  • 1 cup chopped, toasted Wellsley Farms Walnuts

 

Directions

Pour cranberries into a food processor bowl. Cover and pulse in 2-second bursts, scraping down bowl with a rubber spatula, until the berries are coarsely chopped. Do not over-process. Transfer cranberries

to a medium mixing bowl and set aside.

 

Quarter unpeeled oranges and place in the processor bowl. Pulse until just coarsely chopped.

 

Combine oranges with cranberries in mixing bowl. Stir in 1½ cups of sugar and chopped walnuts (if using). Taste and adjust sweetness if necessary by adding more

sugar a little at a time.

 Pecan and Cranberry Crusted Salmon with Cran-apple drizzle

Ingredients

  • 2 Tablespoon Dijon Mustard
  • 2 Tablespoon Butter, melted
  • 2 Tablespoon Wellsley Farms Organic Honey
  • 1/2 Cup Panko Bread Crumbs
  • 1/2 Cup Chopped pecans
  • 1/4 Cup Dried cranberries, chopped
  • 2 Tablespoon Fresh parsley, chopped
  • 4 6oz. Salmon filets
  • Kosher salt and pepper to taste
  • Cooking spray

Drizzle

  • 1 Cup Fresh cranberry sauce (prepared according to package directions)
  • 1/2 Cup Apple juice
  • 1 Tablespoon Apple cider vinegar

Directions

Preheat oven to 400 degrees.

Add fresh cranberry sauce, apple juice and vinegar in blender and blend until smooth. Pour into a small saucepan and bring to a boil. Reduce heat to medium-low and simmer for five minutes stirring often. Remove from heat. Set aside.

Having all the basics at your fingertips makes meal prep easy as pie – which incidentally, can be a little tricky to make. Ensure you have these essential items in your pantry:

  • Olive oil
  • Salt & pepper
  • Dried herbs and spices including; oregano, basil, rosemary, thyme, chili, turmeric and coriander, paprika, allspice, nutmeg, cumin and cinnamon. Don’t forget fresh garlic too
  • Flour, and sugar
  • Grains such as; pasta, rice, quinoa and buckwheat
  • Canned goods including; chickpeas, lentils, white beans, corn, tomatoes, and tuna

 

Within arm’s reach

Gather all the kitchen utensils and gadgets, and group them into most used and least used. Place your most used items nearest to your cooking area and the least used things further away. This way, for example, your baking tins aren’t getting in the way of the toaster, which you use every morning.

Stock up on kitchen supplies

Make those leftovers more accessible with a selection of different sized clear containers. If you have these at your disposal, you can scoop up any leftovers and have them for lunch the next day. They are also a handy for neatly storing herbs and spices. Bonus tip: if you freeze your leftovers make sure you label what it is and when you put it in the freezer.

Homemade Salad Dressing: Lifestyle Tip and Summer Option

Two weeks ago I was preparing lunch and realized there was no salad dressing.  I instantly became upset because my salad was delicious and wanted the full experience.  My mind began to wonder and that’s when I created my own dressing!  Honestly, homemade salad dressing is a healthier option because there’s no added sodium or fat.  You can regulate the ingredients according to your individual diet.

My recipe started with the base ingredients such as olive oil, salt, pepper, Coleman’s mustard, parsley, and vinegar; there’s so much more to make your dressing appealing.  Homemade salad dressing can be prepared in less than 15 minutes and in larger quanities.  It’s also delicious with (other) afternoon snack options such as tuna, veggies, cheese, and crackers.

It’s almost summer which means we want quick healthy meals.  Consider making homemade salad dressing to compliment snacks, lunch, or dinner!

Quick Girl’s Classic Vinaigrette Dressing

 

1 1/2 tablespoons vinegar

 

1/4 teaspoon salt

 

1 tablespoon Coleman’s Mustard

 

 

1/8 teaspoon pepper

 

3 tablespoons extra-virgin olive oil

 

Preparation:

I purchased a few items of my own and created a recipe with Perdue Harvestland Whole Chicken.  The meal was delicious and the quality of the chicken was undeniable because there were fewer hormones.  If you’re looking to jumpstart a healthier meal option for your family and consume meats with no animal by-products, visit BJs and shop their (new) organic food options.

Can in The Rear Chicken Ingredients:

     

  • 1 4-pound whole chicken
  • 2 Tbsp olive oil
  • 1 opened, half-full can of pepsi, room temperature
  • 1 Tbsp sea salt
  • 2 Tbsp Mrs Dash
  • 1 Tbsp black pepper
  •  

Method:

 

1 Prepare your oven at 350 degrees for indirect heat

2 Remove neck and giblets from cavity of chicken.  Rub olive oil all over the chicken. Mix the salt, pepper, and Mrs Dash in a little bowl, then sprinkle or spread over the chicken.

3 Make sure the can is open and lower the chicken on the open can, so that the chicken is sitting upright and the can in its cavity.

4 Place the chicken in the oven; and don’t check on it for at least an hour. After an hour, check on the chicken and keep checking the chicken every 15 minutes until a meat thermometer inserted into the thickest part of the thigh reads 160°F – 165°F. The cooking time will vary depending on the size of your chicken.  If you don’t have a meat thermometer, poke the chicken with a knife to see if there’s no red juices or if the meat is done.

5 Carefully transfer the chicken to a tray or pan and use tongs to hold the top of the chicken. Lift the chicken and ease the can from inside of the chicken.  Let it cool for 15 minutes. Carefully lift the chicken off of the can.
