On Mar. 23, 2019, “The Women EntrepreneuHERs Brunch” announced pausing the infamous annual brunches, to present the first three-day conference under the brand since its founding in 2015; W.E.B. Con.! W.E.B. Con., is going to take place in the Nation’s Capital on the weekend of Mar. 13th through the 15th in the year 2020. With the anticipation of over 400 female businesswomen, current and aspiring entrepreneurs to be in attendance. W.E.B. is going to bring like-minded and career-driven women from all across the country together! These women are in for a weekend full of networking, furthering their knowledge on business and entrepreneurship, and being inspired by each person they touch.

Living in Baltimore, Maryland Derby season was a fun annual tradition. I have loved attending my sorority’s brunch event AKA Day At The Races hosted by Committee Chair Cylia Lowe, Esq. and Preakness Stakes.

In the deep south, attending the Kentucky Derby is not only a must-attend affair but a mecca of high fashion. This year did not disappoint and the looks were stunning.

Zucchini Lasagna Spirals Recipe: Cooking Demo on WBRC Fox6 News

Last Tuesday I had the opportunity to visit WBRC Fox6 news and host a cooking demo.  The recipe that I prepared was Zucchini Lasagna Spirals.  This was a fun opportunity because I like to prepare meals at home for my family with time-saving kitchen appliances.

I wanted to share the ingredients for those that enjoy trying new meals.  See the list below.

Zucchini Lasagna Spirals

 Ingredients:

  • 2-3 cups Cucina Antica Tomato Basil cooking sauce
  • 12 oz. ricotta
  • 2 tbsp. basil, chopped
  • 1 large egg
  • ¼ cup Parmigiano-Reggiano, freshly grated
  • 8 oz. mozzarella cheese, shredded
  • 4 medium zucchini, thinly sliced lengthwise
  • Salt

Preparation:

  1. Lay the zucchini strips out on a cooling rack (cooling rack allows excess water to drain). Sprinkle salt across the tops of the zucchini and let sit for about 10-15 minutes to let the water sweat out of the zucchini. Pat the water off the zucchini and then flip them over and repeat with the next side. Wipe off excess salt with a towel.
  2. Preheat your oven to 375°F
  3. In a medium bowl mix ricotta cheese, basil, mozzarella, and egg. Stir well.
  4. Spread 1/2 cup Cucina Antica Tomato Basil on the bottom of casserole dish.
  5. Lay out the sliced zucchini noodles and spread about 2 tablespoons of the ricotta mixture over each individual zucchini noodle. Add a spoonful of Cucina Antica Tomato Basil over the top of the ricotta.
  6. Carefully roll up the zucchini and place in the casserole dish.
  7. Spread extra Cucina Antica Tomato Basil cooking sauce over the top of the rolls. Sprinkle Parmigiano-Reggiano on top.
  8. Bake for about 45 minutes or until the cheese on top is a nice golden brown.

A suggestion I provided on-air would be to include onions, mushrooms or ground turkey meat.  This is the perfect dish to serve for dinner or during Sunday brunch.

When Chic Brides Brunch | The Ultimate Pre-Wedding Desitination

A few weeks ago, local Washington DC Event Company A4dable Events (Pronounced “affordable”) hosted the inaugural When Chic Brides Brunch. Hosted by recently engaged WUSA9 Reporter Mikea Turner, the brunch was the ultimate pre-wedding destination for soon-to-be brides!
Upon arriving When Chic Brides Brunch, guests were greeted and then were ushered into the ballroom where they mingled with onsite vendors and enjoyed tunes by wedding DJ Floyd (all of the guests fell in love with his playlist!) The decor of the brunch was breathtaking, with the tables decorated in silver/pink and at first glance, the table looked as if it was adorned in jewelry. There were also real flowers placed in the openings of the candlestick centerpieces, jewel-plated bases, and mini jeweled candlestick holders to accompany.
There was a complimentary mimosa bar, a lavish brunch that included chicken and waffles and on the place setting was delectable milk chocolate that was decorated in bridal decor. After brunch, there was a cake tasting and a bridal fashion show featuring gowns from St. Anthony’s Bridal and one lucky lady was able to win a FREE bridal gown, if that wasn’t enough for the grand finale, there was a pyrotechnics display which gave many an idea of how to end their special day with a “bang!”

The Morning Delight – Hearty Beverage Packed with Vitamins and Nutrients

INGREDIENTS:
11/2 cups coconut milk
1 tsp lacuma
2 tsp pure matcha tea powder
2 frozen bananas
2 to 3 dates, pitted
1 tbsp maple syrup
1/2 tsp vanilla extract OR 1 vanilla bean
Small handful of ice (optional, depending whether you froze your bananas)

DIRECTIONS:
Add the coconut milk, lacuma, and matcha to your blender and process until completely mixed. Turn off, then add the rest of your ingredients and blend until totally emulsified. If using the vanilla bean, split the bean in half and scrape out the vanilla pods.

Tailgating and Visiting The Westin Hotel

Last weekend I took a road trip to my collegiate Homecoming celebration, Alabama A&M University.  I’m a traditional girl and returning as Alumni was a big accomplishment.

Aside from viewing the football game, I enjoyed Tailgating because it’s one big party filled with music, food, and a lot of fun!

My attire for the Tailgate was a crop top, high-waisted jeans, and sorority clutch. I selected a pair of heels for height but any true fashion girl has a set of flats nearby.  We also stayed at The Westin Huntsville and I was delighted with the view and room service.

Birmingham Restaurant Week 2016 – Local Culinary Cuisine

Birmingham Restaurant Week started on August 12 – 21, 2016 for residents and tourists in the Alabama area.  This is an exciting opportunity for customers to eat and try new dishes for a reasonable price.

Mango Banana Sunshine Poptails

2 servings

Prep Time: 5 minutes

2 Fruttare® Mango Fruit and Juice Bars, chopped
1 1/2 cups ice cubes(about 9 to 11)
1 small banana, broken into chunks
3 Tbsp. orange juice

Process all ingredients in blender until smooth. Pour into 2 cocktail glasses.
